Who doesn’t like jam? This is actually a serious question. Because of the sugar content of store bought jam, I rarely buy some but trust me, I slow down whenever I pass by them as I am grocery shopping. The sweetness mixed with peanut butter (or almond butter) on a toast…nothing can beat this as a midnight snack in my opinion.
During my research, I saw some recipes that used chia seeds! Chia seeds is a must in vegan baking as it can be an egg replacer. When water is mixed with chia seeds, a layer of gelatin-like consistency forms around the seeds. Knowing this, chia seeds are great thickening agent for the jam, basically replacing the white sugar and the pectin.
What you’ll need:
- 2 cups strawberries (fresh or frozen – if frozen, make sure they are thaw)
- 3-4 tbsp maple syrup, to taste
- 1/2 juice of a lemon (1-2 tbsp)
- 2 tbsp chia seeds
The only step for this jam is to place all the ingredients in the blender and blend until smooth. You will notice that it’s still very liquidy but with time, the chia seeds will work their magic. Store in a airtight container and place in the fridge for a couple of hours until the mixture thickens.
