Last week was the Superbowl and to get into the “let’s waste a couple of hours watching a game, to which I will have no idea what is really going on half the time” mode, I made Superbowl food to keep me entertained. Am I the only one who absolutely love eating a buddha bowl (a.k.a. power bowl, a.k.a. macro bowl)? It’s kind of a one shop meal; in one bowl you have your protein, fat and of course, lots of carbs! You can pack as many vegetables as you want and choose to eat them raw, cooked, steamed, sauté, etc. the possibilities are endless.

One weekend afternoon, my boyfriend and I ended up watching several documentaries on Netflix, spending servals hours on the couch in front of the TV. No shame though – sometimes you need those days were you spend countless hours on Netflix. Is it even possible to spend less than 1 hour on Netflix? That day, the willpower was simply not there… But we did get this recipe idea from the documentary Forks Over Knives Presents The Engine 2 Kitchen Rescue with Rip Esselstyn. And it’s the best lasagna I’ve ever made. This is not my original recipe but it’s so good that I had to share.
