Vegan Christmas Dinner Ideas (Sides)


Social gathering are not always easy when you’re vegan (or you follow a particular diet) but they can still be enjoyable and the food can taste amazing. Planning in advance is always a good idea; if no option will be available, best thing is to bring some food that you can enjoy and share with others. Hopefully these recipe ideas will make it a little easier for anyone wanting to survive the holidays with good plant-based food.

Kale Cranberry and Pecan Salad

Gluten-free. Serves 4-6


  • 4 cups kale, chopped in bite size pieces


  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp applesauce
  • 1 Tbsp water
  • 1 tsp dijon mustard
  • 1 tsp rosemary, thyme and basil
  • salt and pepper to taste

Wash the kale and place in medium bowl. In a blender, blend the dressing ingredients. Pour over kale and mix until all pieces are covered. Place in the fridge for 30 mins in order to let the dressing soften the kale.

Caramelized onions mashed potatoes

Gluten-Free, Oil-Free option. Serves 4-6


  • 10 potatoes, peeled and chopped
  • 2 medium onions or 1 large, sliced
  • 2 Tbsp vegetable broth (or oil)
  • 1/2 cup nut milk
  • 1 Tbsp dried chives
  • 1 Tbsp dried thyme
  • salt and pepper to taste

Boil water over high heat until the water boils. Add potatoes and cook for 20-30 mins until tender.

In the meantime, sauté the onions with broth or oil until browned.


Roasted Butternut Squash with Cranberries

Gluten-free, Oil-Free option. Serves 6


  • 1 butternut squash, cut in cubes (about 4-5 cups)
  • 1 cup whole frozen cranberries
  • 2 Tbsp olive oil (substitute for vegetable broth for oil-free option)
  • 2-3 Tbsp maple syrup

Preheat oven at 400F. Place all the ingredients in a bowl and mix to coat all the butternut squash pieces. Place on a lined with parchment paper or a silicone sheet and bake for 20-25 mins. Switch the oven to broil (500F) and bake an additional 3-4 mins.

Remove from oven and serve.
