Chia Seed Strawberry Jam

Who doesn’t like jam? This is actually a serious question. Because of the sugar content of store bought jam, I rarely buy some but trust me, I slow down whenever I pass by them as I am grocery shopping. The sweetness mixed with peanut butter (or almond butter) on a toast…nothing can beat this as a midnight snack in my opinion.

During my research, I saw some recipes that used chia seeds! Chia seeds is a must in vegan baking as it can be an egg replacer. When water is mixed with chia seeds, a layer of gelatin-like consistency forms around the seeds. Knowing this, chia seeds are great thickening agent for the jam, basically replacing the white sugar and the pectin.
