Do you ever have those days where you think you have nothing good to eat? Well this pasta was whipped up during one of those days. Having only had half a block of soft tofu in the fridge with not much else to make a meal, I didn’t have high hopes. But surprisingly, it turned out amazingly good!

After becoming obsessed with the product, Le Minot (see my taste test review here), I wanted to try making a fancier dish using chickpea fries. And just like that, pulled BBQ jackfruit with chickpea fries came to life. Topped with a spicy mayo sauce, this will definitely impress your guest at the dinner table.
This product was introduced to me at the 2017 Montreal Veg Fest: Le Minot, Organic Chickpea Fries. After tasting a sample at the event, I was hooked. Made only with simple ingredients, I was excited trying different recipes with this product.

Who doesn’t like jam? This is actually a serious question. Because of the sugar content of store bought jam, I rarely buy some but trust me, I slow down whenever I pass by them as I am grocery shopping. The sweetness mixed with peanut butter (or almond butter) on a toast…nothing can beat this as a midnight snack in my opinion.
During my research, I saw some recipes that used chia seeds! Chia seeds is a must in vegan baking as it can be an egg replacer. When water is mixed with chia seeds, a layer of gelatin-like consistency forms around the seeds. Knowing this, chia seeds are great thickening agent for the jam, basically replacing the white sugar and the pectin.
