Sweet Potato & Zucchini Chickpeas Burgers

Burgers are one of my favourite thing to make when I have no idea what to eat for supper. If you have a type of bean, oats or flour and veggies, you are basically ready to make your own burger from scratch! So simple and easy.

This burger recipe is delicious, gluten free, filling and you can make it without using any oil. Actually, baking these burgers taste better than pan-frying them!

  • 2 tbsp ground flax seeds
  • 5 tbsp water
  • 1 medium onion, chopped
  • 1-2 cloves of garlic
  • 2 cups of sweet potato, shredded
  • 1 cup zucchini, shredded
  • 1 cup carrots, shredded
  • 1 cup fresh spinach
  • 1 can (540 ml / 19 fl oz)chickpeas, drained
  • 1 tbsp liquid soy seasoning or soy sauce
  • 1 tsp chili powder (optional)
  • 1-1½ cup oats (use gluten-free oats if needed)
  • ½ cup sunflower seeds, shelled & unsalted
  1. In a small bowl, soak the ground flax seeds with the water. Set aside.
  2. In a lightly oiled pan over medium heat, cook the onion and garlic for 5 mins, until lightly browned.
  3. Add the sweet potatoes, zucchini and carrots. Cook for 10 mins on low-medium heat, until the sweet potatoes start to soften.
  4. Add the spinach and cook for an extra 5 mins.
  5. Place chickpeas, flax seeds, cooked veggies, soy seasoning and chili powder in a food processor or blender. Blend until smooth
  6. Place mixture in a medium bowl, mix in the oats and seeds, if using. Mix well until smooth.
  7. Form patties with your hands. Cook as instructed below.
  8. For stovetop: Over medium heat, heat up a light oiled pan and add burgers. Cook for 7 mins, turning them over once one side was browned. Turn down heat to low-medium and cook for an extra 10-15 mins.
  9. For oven: Preheat oven to 375F. Place burger over parchment paper or non-stick pad over a baking sheet. Cook for 15 mins. Turn them over and cook an extra 15-20 mins.
  10. Serve on a bun with tomatoes, avocado, onion, lettuce & condiments of choice (vegan mayo is delicious on this burger!)
